RIGID WALKING WITHOUT A NET
Philippe is averse to sulphur and waits until his wine is ready in good conscience. That can sometimes take years. Making wine without sulphur is incredibly risky and can be compared to tightrope walking without a net. He is always one of the last to harvest because the grapes and stems have to be ripe. This dedication and risk-taking in his winemaking process is a testament to his craft and the adventure he brings to each bottle.

MASTERY
What always strikes me about Philippe's wines is the mastery with which he knows how to tame the excesses in his wines. What a mastery of alcohol and tannin. It is perfectly balanced and in keeping with the typical aromas of the region. What a delight! The rich and concentrated flavours combined with the traditional warmth of an almost botrytised Chardonnay balanced with the refinement of the Gamay. Although you would nearly think it is Pinot Noir.
