The name Roses de Jeanne is a tribute to his Polish grandmother, Jeanne, who was a significant influence in his life and his love for winemaking. This personal connection is reflected in the delicate and refined nature of his Champagnes.
PEARLS
Cédric Bouchard is so passionate and enthusiastic that you are captivated by his dedication and eye for detail when he talks about making his wine. After the harvest, the grapes are gently pressed three times and only the first pressing that gives the best quality and the wealthiest aroma is used.
For the 'prise de mousse' phase, where the delicate bubbles are added to the still wine, Cédric takes two months to ensure a much softer and more concentrated mousse. This process involves a slow and cool second fermentation, which creates smaller, finer bubbles and helps improve the vinous character of the wine. The technique and the slow turning of the bottles create a delicate pearl that excels in a dazzling mousse full of vitality, lightness and unparalleled aromas—a perfectly integrated acidity in the heart of the fruit and luxury without too much weight.
