"Just Add Wine" represents a significant part of our lives, dedicated to traveling, studying, and, most importantly, tasting wine. Wine is not just wine, but a natural passion that runs through Ine's life. She has received numerous awards, including a Michelin star, and was the driving force behind the Hotel & Restaurant De Graaf van het Hoogveen in Noordwijk aan Zee. In 1981, Ine received the prestigious ‘Cep de Giscours’ from HRH Prince Bernhard for having the best wine list in the Netherlands, a recognition highly regarded in the wine industry and an essential milestone in her life. In 1987, she was honored with the American ‘Wine Spectator’s Grand Award’ at the Marriott Marquis Hotel in New York, a recognition for one of the best wine lists in the world, solidifying her international influence. Ine is known for her carefully curated wine evenings, dinners with the world’s leading chefs and winemakers, and her dedicated work at ‘t Koetshuis in Rhenen. Her expertise and guidance in wine pairings, menu development, and maintaining high standards in the kitchen were instrumental in the success of the chefs she worked with, ensuring that their exciting creations were always enhanced with the purest wine. She is a woman after my own heart.

Ries is the epitome of a professional Maître-Sommelier. With experience in prestigious two- and three-star restaurants at home and abroad, including Cees Helder's Parkheuvel, Roger Souvereyns' Scholteshof, and Jean-Claude Bourgeuil's Im ​​Schiffchen, Ries is a constant source of inspiration with an impeccable training and deep respect. Guests who have been fortunate enough to be welcomed by him will remember his warm smile and innate gift for hospitality. Ries is exceptional and possesses endless passion, professionalism, and genuine empathy. He has the talent to select the best wines meticulously, treat each ingredient with respect, and bring a profound sense of emotion into every glass, elevating flavors and stimulating the senses to create a delicate and harmonious balance.

Ries' professional journey in the culinary and sommelier industry is a testament to his expertise and dedication. His fascination with the world of gastronomy began at a young age, as he helped his mother in the kitchen, washed dishes, and absorbed her cooking skills. This early passion led him to pursue formal education and training in the culinary arts, including internships at renowned restaurants at home and abroad. His unwavering dedication and permanent commitment brought him to the esteemed role of sommelier, which he embraced with pride and deep satisfaction.

However, Ries' journey was not without its challenges. One morning, disaster struck when he fell to the floor during a busy presentation of Rogers Souvereyn's first cookbook and suddenly became deaf. Despite this setback, Ries' resilience and determination shone through as he continued to work at the Scholteshof for another three years. His guests, however, found him arrogant because he could not understand them well. Undeterred, he decided to study Gastronomy at the Pedagogical Technical College and teach simultaneously, hoping for a permanent job.

When I look back on his enormous fighting spirit, optimism and attention to beauty and happiness without losing sight of reality, it is unsurprising that Just Add Wine has become a pearl for wine and food lovers.
